Waste that tells you something

Spoilage, breakage and over-production are three different problems. A single "wastage" figure hides which one you have.

A property whose losses are mostly spoilage has a purchasing problem. One whose losses are mostly breakage has a handling problem. One whose losses are mostly items that walked has a control problem. A single total tells you none of that.

Vestibel categorises every write-off and reports the categories separately as well as summed, because the mix is the actionable part.

Each loss carries the cost the stock was actually received at, snapshotted onto the movement, so re-pricing an ingredient next year does not restate the money value of last year's losses.

Recording a loss is also a deliberately separate permission from editing the catalogue. Renaming an item is administration; declaring that forty portions no longer exist destroys recorded value, and it is the one action in the module that can conceal a control problem.
