A ticket-level kitchen display tells the grill that a table is waiting. An item-level one tells the grill what it is cooking and lets the bar get on with the drinks independently.
Vestibel routes each line to the station that makes it, and each line carries its own state. The board updates over a live connection rather than a refresh loop, so nobody is looking at a stale screen.
The load-bearing distinction is pending versus fired. A pending line lives in the cart, is not on any ticket, and is not part of the bill — it is not even in the tax base, because charging tax on a phantom is indefensible. Firing is what puts it on a ticket and on the bill, in one auditable step.
A recall is a cancel, not a return to pending. The line genuinely reached the kitchen and the record says so; it cannot be quietly refired as though it never went. If it is wanted again, it is added again.
